      Sharing Plates: From Pangium to France

      How the unique flavours of Chef Malcolm Lee's newest restaurant earned a spot on French TV.

      Pangium at the Singapore Botanic Gardens

      Barely a year old, the COMO Group’s youngest bright culinary star continues to intrigue and titillate tastebuds worldwide with its inimitable take on heritage cuisine.

      This month, Pangium – the restaurant founded and helmed by Chef Malcolm Lee – was showcased on Echappées Belles, a prominent French travel documentary show. With an average viewership of more than 1.5 million per episode, the popular weekly series has since cast a spotlight on a myriad of travel hotspots worldwide since it started airing 17 years ago.

      The clip on Pangium is part of a 90-minute episode dedicated exclusively to the Singapore Story and its radical transformation from a small fishing outpost into one of the world’s most vibrant and sophisticated city-states today. 

      With its progressive heritage fare and contemporary proposition, Pangium has often been quietly tipped as one of the culinary vanguards that is helping Singapore push the gastronomic envelope, cementing the island state’s reputation as an up-and-coming food Mecca of the world.

      In the 10-minute segment (view link below), Chef Malcolm shared with host Sophie Jovillard the philosophy behind Pangium, the unique Singapore identity, in particular the colourful and storied past of the Straits Chinese, and, of course, the  restaurant’s panoramic and forested mise-en-scene in the heart of an UNESCO World Heritage Site, the Singapore Botanic Gardens.    

      A remarkable baby step, Pangium’s brief star-turn on Echappées Belles offers a glimpse into the next nascent wave of fusion food and its exciting fresh new taste.
